Slow Cooker Ginger Beer Recipe

Adapted from "Canada's Slow Cooker Winners"

750 g (1 1/2 lbs)   Gingerroot, peeled* and coarsely chopped (approx. 2 cups)
2 cups     Sugar
3 tsp       Lemon Juice
2 cups    Water


12 pack canned Lemon-Lime Soda


1. Combine in the ginger, sugar, lemon juice, and water in the Crockpot
2. Cover and cook on Low 5 to 6 hours
3. Let syrup cool, then add to glass jar and refrigerate.
4. In a tall glass, pour about 1/4 cup worth of the syrup, then add the lemon lime soda, and viola! Gingerbeer.


*I just thoroughly washed the ginger skin, but didn't bother with peeling. This didn't seem to make much of a difference... the syrup just looked slightly cloudy because of some of the skin particles.

Note: If you desire a stronger taste, simply add more. Play around with how much syrup you like in your glass.
