This recipe is perfect the perfect snack food! Pack it for a picnic, or serve it at a party, and of course, I'd recommend it for a movie night too!
3 Tbsp Sunflower or Coconut Oil
1/3 - 1/2 cup popping corn
1 package semi-sweet chocolate chips 12. oz
2 tsp Butter
1 package Vanilla or white whips 10 - 12 oz
2 cups Coarsely chopped pecans
1.Heat the oil in a very large pot over medium heat. Add in popping corn (I added enough to cover the bottom of the pot, which was probably about 1/2 cup. Shake the pot so that the kernels get coated in the oil.
2.Cover the pot and allow the kernels to start popping. Once you can hear them popping, pick up the pot slightly off the element (by the handles of course!) and shake the corn. Do this every minute or so. This is to prevent it from burning, and to help with popping as many kernels as possible.
3.Once popping seems to have stopped, remove from heat and open lid. There will be a few more pops here and there. Allow to cool. (With my approx. 1/2 cup I made about 14 cups worth of popcorn. Anywhere between 11 and 14 cups will be good)
4.Meanwhile, in a small pot on low heat, melt the chocolate with 1 tsp of butter.
5.Grease a 10 x 15 pan. Spread out popcorn in it, and drizzle the melted chocolate in and stir.
6.Next, melt the white/vanilla chips in the same way with 1 tsp butter. Also drizzle over popcorn, and stir to coast as much popcorn as you can. Next, stir in the pecans and chill in the fridge. When the popcorn is firm, then remove from fridge, break into pieces, and there you have it, a delicious, multi-functional snack!
