Maple Buttermilk Pies (Makes 2)

I only slightly revised this recipe from this post on 101cookbooks.com. Here's the link to her version. I really enjoy her blog. By using store-bought pie crusts, I saved a lot of time and had two pies for our party in a flash!

 Here's my version:

2    store-bought pie crusts ( 9 inches, 23cm)
1    zest of a lemon
2    tbsp brown sugar
6    egg yolks
1/4 cup flour
2/3 plus 2 tbsp pure maple syrup
2     cups buttermilk
1     tsp pure vanilla extract
1/2  tsp fine sea salt


Preheat oven to 325. Mix together zest, sugar, yolks, and flour. Mix until lump-free. Add the Maple syrup a bit at a time. Finally, add the buttermilk, vanilla and salt.

Pour 1/2 of the mixture into the first crust, and the rest into the other. Bake both together for about an hour, or until the filling has set. Remove and place on a cooling rack.
