1 23 cm (9inch) Pie Crust
1 1/2 cups cheddar cheese (or you can also try 1/2 cheddar, 1/2 mozzarella)
2 Tbsp flour
2 small onions, chopped
4 Tbsp olive oil
1 1/2 tsp dried basil
2 small -medium tomatoes sliced
2 eggs
1.Preheat oven to 350 F. Chop the onions and sauté. While the onions are sautéing, grate the cheese and toss it with the flour.
2. Remove onions from heat when golden. Sprinkle 1/3 of cheese and flour mix on bottom of pie crust. Spread onions evenly on top of cheese.
3. Heat more oil and add sliced tomatoes, and basil. Fry for just a couple minutes, until nice and fragrant. Spread over onions.
4. Spread the rest of the cheese over top of tomatoes. Beat the eggs and do your best to pour them evenly over the cheese.
Slice like a pie. Serves 6. Eat with a soup and salad, or as the main attraction with a rice dish and some steamed veggies.
