Hey ya'll.
I caught the flu this week. A total bummer. I am on my way to recovery now, so I thought I'd post one of my favourite soups. It is especially perfect for sickness because it is packed with nutrients, but sits easy in your still-uneasy stomach.
You will need a minimum 4-quart Crock-pot (3.8L)
Olive Oil
1 Onion
2 Cloves of Garlic
Fine Sea Salt
Pepper
Thyme
1 large Sweet Potato, chopped into approx. 1 inch cubes
3 1/2 cups chickpeas
3-5 cups vegetable broth
3 cups Kale, chopped
1. Chop onion, heat olive oil in a saucepan and add in onion. Mince garlic and add to onion once it is soft. Allow to saute another minute or so and then sprinkle with sea salt, pepper and thyme and stir until coated. Give it a couple more minutes until fragrant and onion and garlic are well cooked. Add to slow cooker stoneware
2.Stir in sweet potatoes and chickpeas to coat. Then add in broth, adding enough to just cover ingredients.
3. Cover and cook Low: 6 - 8 hrs/High: 3 - 4 hrs.
4. Add in the kale and stir. Cover let the kale sit for 10-15 minutes on high.
Serves 6. Enjoy!
